Olive Oil Cooperative of Stypsi, Lesvos

Stypsi owes its name to "styptiria," that is, the double sulfate of aluminum and potassium, which abounds in its subsoil. It is useful for leather processing and an excellent mordant in dyeing. The residents are mainly livestock farmers, olive cultivators, and excellent stone builders.

The Olive Oil Cooperative of Stypsi has one of the most modern olive mills in Lesvos. Its high - quality oil is bottled in glass bottles and metal containers and is marketed for wide consumption in the domestic market.

The Women's Agrotourism - Agro craft Cooperative of Stypsi Ypsilometopou, which has been officially operating since November 2000, offers mainly traditional sweets, pasta, and wonderful handmade embroideries. The Cultural Association of Stypsi and the Athletic Club "Karavangelis" are also very active.

The village has a Kindergarten, a Primary School, a Rural Health Clinic, and a Police Station. It is one of the few villages in Lesvos that has been almost untouched by the demographic problem.

Here, in 1866, was born the Macedonian Struggle hero, Metropolitan Germanos Karavangelis, whose bust adorns the yard of the Primary School. In the "Kato Mahalas" (Lower Neighborhood), the imposing church of the Holy Trinity stands. It began construction in 1924 and was officially inaugurated on 27/9/1970. It is a three - aisled cruciform basilica made of gray trachyte, with an interior dome and a very beautiful iconostasis. In the "Pano Mahalas" (Upper Neighborhood) dominates the church of the Dormition of the Virgin Mary, built in 1805. It is a three - aisled basilica with a narthex. In its courtyard stands the bust of the village's great benefactor Christofas Chatzidoukakis. On August 23, during the nine - day commemoration of the Virgin Mary, a three - day festival takes place and "kiskek" is distributed.

The residents’ occupation is exclusively agricultural and livestock-based, and in recent years, beekeeping has also developed. Tourism is also an occupation for many.

  • Chylopites: Rich food made from the best ingredients, wheat flour, eggs, and milk from our area.
  • Ladotyri: A dry basket - shaped cheese preserved in oil, trapping the essence and aroma for several months.
  • Feta: A white, soft cheese preserved in whey, of Greek origin from sheep and goat milk.
